Especially during summer, food with a high fat or carb percentage can be heavy on your stomach. A fresh salad can be filling and also a healthy alternative on a super hot day. You can serve it with a nice French baguette.
What you need for your salad:
- 1/3 cucumber
- 2 cups of lollo rosso + lolo bianco
- 2 tomatoes
- A handful of roasted Cashews
- 125g of chicken breast
- 60g of corn grains
- Cress for decoration
Dressing:
- 1 cup fresh raspberries
- 1 tablespoon white sugar
- 2/3 cup balsamic vinegar
- ¼ cup olive oil
- 1 tablespoon honey
- ½ teaspoon salt
